A New York-based salad chain opened Friday, Aug. 21, at University Town Center, and at least four more restaurants are headed to the district over the next year.
Just Salad is now serving customers at The Market at UTC, 5231 University Parkway, Suite 113, the Business Observer reported. The fast-casual spot offers salads, warm bowls, wraps, market plates, soups and smoothies, with orders available in-store or online daily from 10 a.m. to 9 p.m.
The chain was founded in 2006 and now operates more than 100 locations in seven states and Washington. Its nearest existing location is in South Tampa. Additional stores are coming to Odessa and two Naples addresses, according to the company's website.
Juice bar and three sit-down restaurants in the pipeline
Pure Green, a juice and smoothie concept offering cold-pressed juices, acai bowls and artisan toasts, plans to open in September at 5275 University Parkway, Suite 130, next to Pure Barre.
Three sit-down restaurants are also under construction along North Cattlemen Road near Florida Blue, all targeting 2027 openings:
Olivia and On Swann, two Tampa-based concepts being built from the ground up. Julie Fanning, a spokesperson for Benderson Development, which owns the UTC property, confirmed the 2027 timeline in a July 24 Business Observer report.
BrickTop's, a Nashville, Tennessee-based new American restaurant known for sushi, seafood and steaks. Project manager Leigh Anne Balsman told the Business Observer in its July 24 report that the 7,500-square-foot location at 55 N. Cattlemen Road is aiming for a mid- to late-summer 2027 opening. The chain, founded by restaurateurs Joe Ledbetter and Tom Brunnberg, already has four Florida locations.
UTC's dining lineup has grown steadily this year
The additions join a UTC dining scene that has grown steadily in 2026. The Greek restaurant Blu Kouzina opened at 295 N. Cattlemen Road in March, and Yugen, a Japanese hidden chef's counter concept, debuted at 190 N. Cattlemen Road in February. The district now counts more than 80 dining options among its 200-plus retailers, according to Benderson Development.
